Skinny Watermelon Mojito

I love mojitos! I drank my weight in them when I was in Mexico with my husband 4 years ago. I however do not like that they are filllllllled with sugar. I mean filled! The typical way to make them is adding a tsp of sugar per drink, it can add up quick. I really wanted to add this to my summer drink list but I did not want all the calories, carbs and sugar. I was cutting up watermelon for my kids and our upcoming camping trip this weekend and thought about using the juice in a drink. I played around with it and man, I created a refreshing, delicious drink! My husband doesn’t really like mixed drinks or sweet drinks but he tasted this and said, “You need to make this in a big pitcher for parties because this is super refreshing!” I also used my Stevia simple syrup recipe. I think that I am going to make it’s own post soon since I use it so often. That way you can save it and add it anywhere that simple syrup is called for.

Skinny Watermelon Mojito

Ingredients

  • ½ cup cut up watermelon chunks
  • 1 ½ ounces White Rum
  • 1 small lime juiced
  • 5 mint leaves
  • Ice
  • Seltzer Water
  • 1 ounce Stevia Simple Syrup

Instructions

  1. Put watermelon chunks in a blender and blend until it’s a smooth, liquid consistency.
  2. Pour the juice from the blender through a mesh sieve into a glass removing pulp. It should be ¼-1/3 cup of juice. I started with ¼ cup but ended up pouring the rest of the juice into the glass at the end which makes it sweeter. Your choice.
  3. Put mint leaves into the bottom of a shaker and muddle. Pour watermelon juice and lime juice into shaker. (The lime juice should be around ½ an ounce) Pour rum into shaker and fill with ice. Shake for 30 seconds.
  4. Put ice into an 8 ounce glass and pour shaker into it. It should fill the glass ¾ full. Pour seltzer water to fill the rest of the way. Not too much or it will water down the flavor. The bubbly water makes it so much more refreshing.

If you want to make this drink for a crowd, just multiply this by 8. You don’t have to put it in a shaker, just muddle the mint into the bottom of the pitcher, add in the ice, juice and rum then stir. After you are all stirred up, add in seltzer water. If you are not serving right away, hold off on the seltzer water until right before serving. Perfect for summer bbqs!
