I love cucumber herb water. Whether it be made with mint or basil, it’s so refreshing. I thought I would take that concept and make lemonade with it and add some vodka. The result turned out so great! This can be made for your kids as well or turned into a mocktail just by omitting the vodka at the end. It’s also a healthy drink which makes it even more amazing!

Cucumber Basil Vodka Lemonade

Ingredients

  • ½ cup cucumber chopped
  • 3 basil leaves
  • ¼ cup fresh squeezed lemon juice
  • ¼ cup water
  • 1 tbsp agave
  • Lemon Sparkling water
  • 3 ounces of vodka

Instructions

  1. Put cucumber, agave, water (not sparkling), basil and lemon juice in a blender.
  2. Put Ice into a shaker. Add vodka and pour cucumber mixture into the shaker.
  3. Shake up and then pour into two glasses. Enjoy!

This is a great twist on your typical lemonade drink that will for sure impress your friends at any event!

Need an awesome low carb, gluten free pizza? This is the one for you! We eat it a couple times a month, our girls love it! It also reheats really well which is a plus for lunches. It’s simple and can be made so many ways. The recipe I have below is for the crust. To top it you can use your favorite pizza sauce, cheeses, veggies, pepperoni, the possibilities are endless!!

Chicken Crust Pizza

  • Servings: 6-8

Ingredients

  • 3 Chicken breasts
  • ¾ shredded mozzarella cheese
  • ¼ cup coconut flour
  • 2 eggs
  • 1 tbsp Italian seasoning
  • Salt and pepper
  • Avocado oil (drizzling)

 

Instructions

  1. Preheat oven to 400 degrees.
  2. Put chicken breast, eggs, coconut flour and cheese in a food processor. Pulse until all combined and ground into a paste like texture.
  3. Add in Italian seasoning, salt and pepper. I don’t measure the salt and pepper, I just eyeball it.
  4. Put parchment paper on a baking sheet and spray it with some cooking spray.
  5. Pour out chicken mixture and with a rubber spatula, spread the chicken mixture out.
  6. Drizzle some avocado oil on top of the chicken spread and keep pressing and spreading until it is around ½ inch thick.
  7. Bake for 15 minutes
  8. Put on pizza sauce and toppings and then place back in the oven for another 15 mins or until it all looks melted.

 

Every time we make this for people or tell them they need to try it, they rave about it! I was always skeptical until I tried it and now it’s one of my favorite dinners! Kids love it too and love that they can put on their own toppings. Also, it’s low carb/ high protein which we personally love! I’m all about the guilt free remakes of my favorite dinners!
