Peach Tarragon Rum Smash

Could quite possibly be one of the tastiest summer drinks.  It’s peachy with a hint of black licorice.  It pairs perfectly with rum or whiskey, but rum is my personal preference.  I also love that this can be made any time of year because if fresh peaches aren’t in season, then grab some frozen peaches.  Let the frozen peaches thaw, them smash them up the same way you would a fresh peach.

Peach and Tarragon Rum Smash

Ingredients

  • ½ peach, sliced into ¼-inch slices
  • 1 medium sprig of tarragon
  • 1 oz. Stevia Simple Syrup or honey syrup (equal parts honey and water)
  • Ice
  • 1-2 oz of rum (depending on how strong you like your drinks)
  • Splash of club soda (I used lemon flavored for this drink)

Instructions

  1. Muddle peach, tarragon, and syrup in a shaker or a glass.
  2. If using a shaker, add some ice and the rum and shake until cold then strain into an ice filled cocktail glass. If using a glass, add rum to an ice filled cocktail glass and strain muddled peach and tarragon into glass using a mesh strainer.
  3. Top off with club soda and mix well.
  4. Garnish with a sprig of tarragon and a slice of peach.
