Raspberry Mojito

Last week I talked about using berries for a few different drinks since I had so many at the house. I did a Bourbon drink and now I thought I would switch it up and do a drink with Rum! This drink takes me back to the Caribbean but I used stevia instead of sugar to lighten things up of course!

Raspberry Mojito

Ingredients

  • 2 ounces of white rum
  • 8 raspberries
  • Stevia simple syrup
  • 1 lime juiced (3/4 ounces)
  • Seltzer water
  • 3 mint leaves
  • ice

 

Instructions

  1. In a tall glass muddle raspberries, stevia simple syrup, mint leaves and lime juice.
  2. Place ice on top and pour in 2 ounces of white rum
  3. Fill the rest of the glass with seltzer.

This drink is very similar to last week’s Raspberry Bourbon Smash but tastes completely different by swapping out spirits and adding in mint. Perfect way to utilize in season fruit before it’s sadly gone!
