Mango Avocado Salsa

My husband lives for mangoes, and like father like son, my son does as well.  When my mother-in-law brought over mangoes the size of my head, I knew I needed to do something delicious with them. This Mango Avocado Salsa is the perfect way to spice up chicken, shrimp, and even chips if you’re looking for a little snack.  We used it for all of those and it was a winner.  Not to mention it took no time to prepare.

To get the benefits of all of that great mango flavor, make sure to use ripe mangoes.  It will give you that sweetness and pairs perfectly with the creaminess of the avocado.

Mango Avocado Salsa”

  • Servings: about 3 cups

Ingredients

  • 1 mango, peeled and chopped
  • 1 avocado, peeled and chopped
  • 1 tomato, chopped removing the watery parts
  • 1 jalapeno, minced (remove seeds and ribs for less spicy)
  • ¼ cup cilantro, finely chopped
  • ½ white onion, finely chopped
  • 1 lime, juiced
  • Pink Himalayan salt, to taste
  • Black pepper, to taste

Instructions

  1. In a medium bowl, combine all ingredients and stir to combine.  Season to taste with salt and pepper.
