Healthy Pina Colada

Who likes Pina Coladas and getting caught in the rain? I do! I like it better with sunshine but these drinks make me happy in any weather! I however do not like the sugar and carbs that come in this traditional drink. During summer I want to be trim since 90% of it is spent in a swimsuit, I’m human, this is a thing. So drinking high calorie, sugary drinks isn’t my usual way go to. On the 4th of July I decided to make Steph’s Pineapple Sorbet for the girls. I however wasn’t paying attention (as usual) and poured in a cup of coconut water instead of a couple Tbsps. I laughed and changed my serving bowls into cups with straws. Steph also gave me the grand idea to fold some coconut cream into it making a Dole Whip (which I’m obsessed with). I did that for the girls and served them up. For AJ and I, I added rum. Holy cow I was in heaven!! I made these again the next weekend for my dad and stepmom and he was so happy to be sipping this amazing summer drink in a lounge chair by the lake. You will not disappoint with this drink people! It’s a must make!

Healthy Pina Coladas

Ingredients

  • 3 cups of frozen pineapple 
  • 1 lime zested and juiced
  • 1 cup of coconut water
  • 1 cup of coconut cream or whipped cream
  • 8 ounces of white Rum

 

                      

Instructions

  1. Put frozen pineapple, lime zest and juice and coconut water in a blender. Blend it up!
  2. Add in rum and blend some more.
  3. Add in more frozen pineapple if it gets too runny. The consistency is up to you!
  4. Fold in coconut cream or whipped cream depending on preference.
  5. Pour in glasses and serve.

For the coconut cream, you can buy whipped coconut cream in the non-dairy section at the store and just fold it in. You can also make your own by skimming the fat off the top of full fat canned coconut milk and whip it up with some stevia and some vanilla extract. The last time I made this, I only had regular whipping cream on hand so I whipped it up with stevia and a tsp of vanilla and folded that in. Have fun with this drink and personalize it to what you like! Either way I promise this will be a new staple for you! Plus your kids can enjoy it too before you put the rum in it! My girls love to have this special drink with us!
