Amazing Taco Salad

This taco salad is somewhat nostalgic to me. My mom has been making this since I was a little girl. I remember my brother and I getting so excited about dinner when this was being served.

Now, not only do I get excited about it, but so does my fam. It’s a regular request for dinner in my household, as well as making lots of extra so there’s enough for seconds…and thirds…and lunch the next day. Yes, that’s how we roll with this dish.

It’s perfect for spring and summer with all of the colors and minimal cooking so it won’t heat up the house. Ahh just thinking about sitting out on the patio with a nice big bowl of taco salad and a Chardonnay #LiveYourBestLife.

Let’s get into it shall we? It’s super simple to make and loaded with flavor. I also cut steps when I’m busy, or don’t feel like making it, and just use salsa as dressing – still delicious.

Amazing Taco Salad

  • Servings: 4-6

Ingredients

Creamy Avocado Dressing

  • ¼ cup non-dairy yogurt
  • ½ avocado
  • ¼ cup cilantro, roughly chopped
  • ½ jalapeno, roughly chopped (optional)
  • 2 tablespoons lime juice – feel free to add in some zest if you want a little extra zing
  • 2 tablespoons olive oil
  • ¼ teaspoon Pink Himalayan salt
  • ¼ teaspoon black pepper

Salad

  • 1 pound ground turkey
  • 3 tablespoons taco seasoning
  • 3 scallions thinly sliced, whites and green parts separated
  • 1 head of romaine lettuce, torn or chopped
  • ½ cup cilantro, roughly chopped
  • 1 medium tomato, chopped
  • 25 oz can black olives, sliced
  • 5 oz can kidney or black beans, rinsed
  • 1 large avocado, roughly chopped
  • 12 oz can pickled jalapenos, sliced (optional)
  • ¼ cup dairy-free cheese – I like the So Delicious cheeses (optional)

 

Instructions

  1. Heat pan on medium-high.
  2. Thinly slice scallions separating the white and green parts.
  3. Add turkey and cook 2-3 minutes breaking up the meat, then add in the taco seasoning and white parts of scallions and cook additional 3-4 minutes until cooked through.
  4. Remove from heat and let cool.
  5. While meat cooks and cools, prepare the dressing.
  6. Add all dressing ingredients into a food processor and blend until smooth. Add additional salt and pepper to taste.  Chill in fridge while you prepare the salad.
  7. Tear or chop the romaine and place in a large bowl.
  8. Roughly chop cilantro and add to the lettuce.
  9. Add the green part of scallions to salad.
  10. Chop tomato and add to salad.
  11. Drain juice from olives and add to salad.
  12. Drain and rinse beans and add to salad.
  13. Chop avocado and add to salad.
  14. Drain juice from jalapenos and add to salad if using.
  15. Add cheese to salad.
  16. Once turkey is cooled add to salad and mix well.
  17. For a little extra crunch, top it with some tortilla chip piece
  18. Serve, dress, enjoy!
