Sweet Potato Nachos

My husband and I love nachos but don’t eat chips often. It is obviously not a super healthy dish, more of a guilty pleasure that we have once in a blue moon. I had a bunch of sweet potatoes around that were going to go bad so I had to do something with them. I thought I would make them into chips baked in the oven to dip in some leftover guacamole that we needed to eat up. My oldest walked up to me seeing me get out stuff for tacos and said, “Mom, we should make nachos!” I was like hmmm…. I have an idea. Now I have seen this before in foodie pictures but never made them. I thought I would give it a go. I had my husband get out our mandoline slicer to make really thin pieces, he doesn’t trust me with it, I’m always cutting myself with things because I’m clumsy haha. My kids were skeptical until the pieces came out of the oven all crispy. My middle girl asked if she could try one and after tasting was all on board! Then the other two followed suit.

You can sub the mozzarella cheese for vegan cheese if you want to make this all dairy free. I personally like mozzarella cheese but my husband used a Mexican cheese blend on his. The best part about this meal is its all customizable for your diet and palate. I just put everything out and let my kids assemble. I wanted something other than just guac for my husband and I so I threw together an avocado jalapeño sauce that is to die for. My husband lost his mind and said I have to make this for everything from now on. This dish would also be a great appetizer to make for a football party or any event!

Sweet Potato Nachos

Ingredients

  • 2-3 Sweet potatoes
  • Avocado oil
  • Salt and pepper
  • 2lbs ground turkey meat
  • Taco seasoning of choice to taste
  • Shredded cheese of choice (or vegan cheese)
  • Pico de galo
  • Greek yogurt or sour cream

 

Instructions

  1. Preheat oven to 425 degrees and put foil on a baking sheet. Slice the sweet potato into rounds like chips very thin (we use a mandoline) and toss them in some avocado oil (or oil of choice). Salt and pepper them and bake them for 25 mins. At the 15 min mark I flipped them. We wanted them crispy so I kept pulling them out and checking, tossing and putting them back in. Watch them carefully after 20 mins or so to make sure they don’t burn.
  2. Cook the ground turkey in a skillet and then once browned, season with taco meat of choice. We really just use a bunch of our favorite seasonings and don’t measure, just to taste.
  3. Place the sweet potato chips on a plate, top with meat and then the cheese. Put it in the microwave to melt. Or you can do this in the oven on the tray and watch it. We just did the microwave since everyone wanted different toppings. Then put on pico, sauce or whatever else you want to make a super delicious healthy guilty pleasure!

Avocado Jalapeno Sauce

  • Servings: 4

Ingredients

  • 1 Avocado
  • ½ cup cilantro
  • ½ jalapeno (mine was spicy so I did it to taste)
  • 2 cloves of garlic
  • 1/3 cup water
  • 2 tbsp white vinegar
  • Salt to taste

 

Instructions

  1. Place all the ingredients into a blender or food processor and pulse or run low until smooth and combined.

 

I’m going to make this sauce in a double batch for this weekend because we are going camping and are going to have a taco bar with friends one night. I can’t wait for them to taste it!
