Lavender Lemon Cocktail

So I am a Lavender freak! I love the scent, the flowers and food baked with it. We have a festival every year in town called the Honey Lavender festival in June. They sell drinks, foods, skin care and more, it’s my own personal heaven! I’m so excited to go and pick up some lavender cookies while sipping a lavender cocktail. Sorry, I just can’t get enough! Since it is coming up in a couple weeks, it inspired me to make a refreshing drink from Lavender. I also like Gin. Gin has a botanical flavor that comes from the juniper berry in which is was created from. Gin is usually paired with tonic water which in all honesty, I just don’t like. The bitterness in cocktails is not my favorite. I will drink it but it would never be my first choice. I love to pair gin with fruits, especially citrus and a sweetener of some sort. What I did in this cocktail was pair gin with lemon and a Stevia lavender simple syrup and then for some bubbles, I added seltzer water. I decided to make this with my usual Stevia simple syrup but I steeped dry lavender in it while simmering. It turned out perfect! I am always trying to put a healthy spin on drinks and this was just the way to achieve that. You can purchase culinary dried lavender on Amazon. I used Anthony’s brand because I love their products.

Even if you are not a gin fan, you should try this drink. It has the perfect balance of sweetness to acidity and is super refreshing!

Lavender Lemon Cocktail

Ingredients

  • 1 ounce Lavender Simple Syrup
  • 1 ½ ounces Gin
  • 1 ounce lemon juice
  • Seltzer water
  • ice

Instructions

  1. Fill a shaker with ice. Combine simple syrup, lemon juice and gin all in the shaker. Shake!
  2. Fill a glass with ice and pour contents from shaker in it. Fill the rest of the glass with seltzer water.

 

Lavender Stevia Simple Syrup

  • Servings: 16 ounces

Ingredients

  • 4 tbsp Dried Lavender flowers
  • 2 cups of water
  • ¼ cup Stevia

Instructions

  1. Pour 2 cups of water in a sauce pan over high heat to boil. Add in lavender flowers. Once it is boiling, add in Stevia and reduce heat to simmer.
  2. Simmer for 30 minutes. Pull off stove and let cool.
  3. Once cooled, strain flowers out of liquid with a mesh sieve. Store in a closed container in the fridge for a week. Mine hasn’t lasted longer than a week because I usually make cocktails for friends and family on the weekends.

 

I put my simple syrup in a mason jar and am taking it out camping this weekend. I am planning on making some take a long jars with me on the boat, this cocktail has definitely made the rotation!
