Homemade Marshmallows
Homemade marshmallows are the best! When you roast them over the campfire, they caramelize like Crème Brulee and don’t catch fire! They are delicious! They are not “healthy” and are still sugary balls of fun but the homemade ones just taste so much better to us when roasted! Since it’s camping season, I thought I would post our homemade marshmallow recipe. I know that I usually do lifestyle posts on Monday but I just really had to share this recipe so you can enjoy it through the summer! It usually takes me about 30 minutes to do and is super messy but worth it! You can flavor them as well. Replace the vanilla liquid with another flavoring of choice, just use the same amount. I like vanilla the best though. I did drizzle caramel sauce over them once poured into the plan and sprinkled course salt on top which was amazing!
Homemade Marshmallows
Ingredients
- 2 tbsp unflavored gelatin
- ½ cup cold water
- 1 cup granulated sugar
- ¼ cup light corn syrup
- ¼ c water
- Pinch of salt
- 1 tsp pure vanilla extract
- ½ cup powder sugar for dusting
Instructions
- Place parchment paper into an 9×9 pan (or 8×8 for thicker) and spray it with cooking spray.
- In your mixer bowl, sprinkle gelatin over cold water and let it sit for 5 minutes.
- Stir together the sugar, corn syrup, salt and water into a medium sauce pan over high heat.
- Bring the contents to a boil, stir occasionally until it reaches a temp of 240 degrees F with a candy thermometer.
- Turn the mixer on and pour contents of sauce pan into the water gelatin mixture.
- Turn up the mixer speed to medium and beat 7 minutes.
- Once white and fluffy, pour in vanilla and keep mixing until combined.
- Pour mixture into prepared baking dish and smooth it around. I spray my rubber spatula with cooking spray to make it spread easily.
- Place in the fridge for a couple hours or until set.
- Sprinkle powder sugar onto the counter and place the marshmallow slab onto it. I use a pizza cutter to cut them into squares. I toss them all in powdered sugar and then put it in a closed container and store room temp for 2 weeks, if they make it that long! Sometimes they “sweat” a little so I will keep the Tupperware open. Either way they taste amazing!
Bringing these along to roast while camping is always a hit! The family loved them and asked for me to experiment with flavors for this summer. Challenged accepted!
