Winter Citrus Salad

With citrus season in full swing – grapefruit, oranges, mandarins, tangerines, you name it.  So dang refreshing and also beautiful with all the colors.  Absolutely perfect when you want a stunning side dish, or to eat with your eyes…me every meal.

You can really mix whatever citrus you love.  I personally just try and incorporate different shades of citrus so I make sure I get some blood orange, cara cara orange, and Valencia in there.  Other than that, it’s either what’s on sale or what I find at the grocery store.  Luckily, right now your store should be well stocked and your choices should be endless.

Add some fresh herbs and you will feel like the fanciest chef on the block, or in the neighborhood.  It’s honestly that pretty and tastes delicious.  As the weather starts to warm, this salad is just the thing to get you in the mood for spring.

Winter Citrus Salad

Ingredients

Dressing

  • ½ shallot, minced
  • 1 lime, juiced
  • ¼ cup olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon honey
  • Pink Himalayan salt, to taste
  • Black pepper, to taste

Salad

  • 1 cara cara orange, supremed
  • 1 blood orange, supremed
  • 1 valencia orange, supremed
  • 1 grapefruit, supremed
  • 3 large fresh basil leaves, finely sliced
  • 3 large fresh mint leaves, finely sliced

Instructions

  1. In a small bowl add all ingredients for the dressing and stir to incorporate. Allow to set while you prepare the citrus.
  2. Supreme your citrus and arrange on individual plates or a shallow platter. Sprinkle with your fresh basil and mint and drizzle with desired amount of dressing before serving.
