If you’re in search of the PERFECT chicken, look no further.  For real.  This chicken is so juicy and flavorful with a crisp skin, it’s an unbeatable combo.  I honestly can’t find any other word to describe it except for freaking perfect!

I’m a big fan of getting a good sear on meats, and chicken is no exception.  You could just throw it in the oven and roast it and get a mediocre crisp, but why do that when you can get the most perfect sear and color from the chicken doing a quick little dance in a cast iron skillet before popping it in the oven?  You wouldn’t because that’s crazy.  Sear your chicken people!  Lock in those juices!

There’s nothing worse than dry chicken.  You can’t enjoy it even if it does have good flavor.  Lucky for us, this recipe definitely avoids that issue.  Juicy chicken to the rescue!  The only bad part is when you’ve eaten it all and you really want more.

Best of all, it’s quick and easy enough to make during the week for your fam with some grilled or roasted veggies, but it’s also something you could make to impress guests.  Easy entertainment dishes are the best.  Less time worrying about the food and being in the kitchen, and more time enjoying your company. They are there to see you after all.

Perfect Garlic Sage Chicken

  • Servings: 4

Ingredients

  • 4 chicken thighs, bone in and skin on (breasts would also be great, just adjust cooking time)
  • 1-2 tablespoons avocado oil
  • 2 tablespoons ground sage
  • 2 tablespoons garlic paste, or garlic powder
  • Pink Himalayan salt, to taste
  • Black pepper, to taste
  • 1 tablespoon fresh sage, thinly sliced

Instructions

  1. Preheat oven to 425⁰F
  2. Heat 1-2 tablespoons oil in cast iron skillet on medium-high until hot but not smoking.
  3. Pat chicken dry and generously season with salt and pepper, garlic, ground sage. Rub on both sides of the chicken and under the skin.
  4. Place chicken skin side down in the hot cast iron for 4-5 minutes or until it’s golden brown.
  5. Flip chicken over on skillet and place skillet on middle rack of oven. Roast for 20-25 minutes or until the internal temperature reaches 165⁰
  6. Remove chicken from skillet and place on plate to rest for 5 minutes.
  7. Garnish with fresh sage before serving.
