Healthy 7-Layer Dip

With football season in full swing, my family is always asking what kind of snacks we’re having on Sunday’s.  Although chicken wings are always a classic, dips are always a hit.  7-layer dip is like the best of every flavor world.  From beans to guacamole to sour cream, it has everything!  A typical 7-layer dip also has an ungodly number of calories and you’ll likely be left not feeling well after eating it.  Let’s face it, you’ll eat half of it before you even realize what you’ve done.  I’m no different.  This healthy version will leave you feeling satisfied with all the flavors of 7-layer dip you know and love, but you won’t feel like you’ve just eaten a whale after consuming. 

I remember one time making this dip for a Super Bowl party and my father-in-law was eating it by the spoonful.  Literally no chip or dippable item in hand – just a spoon.  I guess you could say it’s good enough to eat by itself.  Try making this for your next football viewing and watch all of the happy eaters as they continue to go back for more.

Healthy 7-Layer Dip

Ingredients

  • 2 large avocados, smashed
  • ½ teaspoon pink Himalayan salt
  • ½ teaspoon black pepper
  • ½ lime, juiced
  • ½ jalapeno, minced (optional)
  • 1 cup dairy-free plain Greek yogurt
  • 2 teaspoons taco seasoning
  • 2 – 15 oz cans of black beans, smashed or black refried black beans to save time
  • 1 cup salsa, water drained
  • 4 oz dairy-free shredded cheddar cheese
  • 25 oz can sliced black olives
  • 2 scallions, green parts thinly sliced

Instructions

  1. In a medium bowl combine avocados, salt, pepper, lime juice, and jalapeno and mix until combined into guacamole. In a small bowl combine the yogurt and taco seasoning and mix until combined.  Set both aside.
  2. In a 13 x 9 – inch pan begin to add each layer. Spread the layer of beans evenly over the bottom of the pan.  Top with the guacamole mixture.  Follow with the drained salsa, then the yogurt mixture.  Sprinkle with cheese, olives, and scallions.
