Since fall is officially here, I know I’m not the only person craving all the fall things.  Apples are on that list for sure.  Whether it’s apple pie, apple crisp, caramel apples, caramel apple cheesecake, or apple cider donuts, I want it ALL.  We can’t, however, leave out the apple cider from our drinks.

This Bourbon Apple Cider makes the perfect fall cocktail to give you all the fall feels.  It’s fruity, but warm and cozy at the same time.  I guess we can also consider this healthy since it has ginger kombucha in it?  Yes.  I’m going with a hard yes to that.

My husband and I first tasted a whiskey and apple cider concoction at our favorite brunch spot and immediately knew we needed to create something similar.  I actually prefer this drink to the one we had at brunch.  Maybe it’s because you control the amount of alcohol that goes in (heavy hand if ya know what I mean), or maybe it’s because it’s just so yummy.  Whatever it is, this drink will be your new fall drink.

Bourbon Apple Cider

Ingredients

  • 3 oz unfiltered apple cider
  • 2 oz ginger kombucha or ginger ale
  • 1-2 oz of bourbon (depending on how strong you like your drinks)
  • Squeeze of fresh lemon juice (about 1/2 -1 tsp)
  • Slice of apple, for garnish
  • Cinnamon stick, for garnish

 

Instructions

  1. Fill a glass with ice. In a shaker add all ingredients and give it a good shake.  Pour over ice and garnish with apple slice and cinnamon stick, if you desire.

Mediterranean Cauliflower Rice

Cauliflower rice has become a staple in our home as I’m sure it has in many others.  It tastes great, cooks quickly, and curbs any kind of rice craving.  There are times when plan old cauliflower rice gets boring, or doesn’t quite go with a specific dish. 

This Mediterranean Cauliflower Rice is a great way to make even those that don’t like, or think they don’t like, cauliflower rice change their opinion.  It’s still super quick to make, but adds a little bit of flavor to the otherwise plain taste.  My favorite part is the crunch and nuttiness from the almonds.

Mediterranean Cauliflower Rice

Ingredients

  • 16 oz cauliflower rice (about one head of cauliflower, riced)
  • ½ cup almonds, crushed, sliced, or slivered will all work
  • 2 tablespoons avocado oil
  • 2 cloves garlic, minced or pressed
  • ½ teaspoon pink Himalayan salt, or to taste
  • ½ teaspoon black pepper, or to taste
  • ¼ teaspoon red pepper flakes, optional
  • ½ lemon, juiced
  • ¾ cup parsley, roughly chopped

Instructions

  1. If starting with a full head of cauliflower, cut into chunks and place in food processor in batches until a rice consistency is reached.
  2. Heat a large pan over medium heat and toast the almond until golden, about 5 mins. Transfer the toasted almonds to a bowl and set aside.
  3. In the same pan used for the almonds, heat the oil over medium-high heat. Add the garlic and cook for 10 seconds, or until fragrant.  Add the cauliflower rice, salt, pepper, and red pepper flakes.  Cook for about 6-8 minutes.
  4. Remove from heat
  5. and stir in the lemon juice, almonds, and parsley. Taste and season with additional salt and pepper, if needed.
